Really Good Chili in a Crockpot

This is a really good Chili recipe as it states. I got it from the internet years ago and use it regularly. You can make it hotter if you like but if you want a great base recipe this is it.

 *Halve or quarter recipe for smaller portions.

2 lbs ground sausage

2 lbs ground beef

1 chopped onion

1 clove garlic

1 ½ t. salt

1 ½ t. paprika

1 t. oregano

1 t. ground cumin

4 Tbsp. chili powder *Add additional to taste for hot chili.

½ t. cayenne pepper*Add additional to taste for hot chili.

½ cup beef stock (or bouillon to equal)

1 28 Oz. can tomatoes

1 16 oz can tomatoes

4 lb can kidney beans or soak your own overnight.* Add canned kidney beans last hour or 2 of cooking. If using dry beans you soaked, add right away

Brown meat in skillet, discarding fat.  Combine all ingredients in crock pot, stirring well.  Simmer on low 8-10 hrs, High for 4-5 hrs or auto for 6-7 hrs.  Serve over hot rice and top with cheese, or serve with cheese and tortilla chips.

Serve over hot rice if desired.
Spoon Chili over rice in bowl.
Top with sour cream and cheese if desired or serve with tortilla chips.
