Country Cooking

Some old fashioned recipes- some from a collection of cookbooks that were my Mother’s and my Grandmother’s and Great Grandmother’s before them…going way back.
Some new recipes too… collected along the way from friends, more modern cookbooks and even from the internet.

I CONSIDER ALL OF THESE (PRETTY MUCH) AS BASE RECIPES. I MEAN THAT EACH RECIPE IS A BASIC TEMPLATE FROM WHICH YOU CAN BEGIN AND ADD YOUR OWN TOUCHES, MAKING IT UNIQUE TO YOUR OWN COOKING STYLE. COOKING IS THAT WAY. THEY ARE NOT STATIC RECIPES.
ANOTHER THING I HAVE NOTICED OVER THE YEARS IS THAT SOMETIMES, YOU DON’T ALWAYS MAKE THE SAME DISH THE SAME WAY- SOME DISHES- WITHOUT YOUR MEANING TO- JUST COMES OUT DIFFERENT EVERY TIME.
RECIPES
One of my favorite casseroles.

PIZZA
My mother’s pizza recipe- with a new twist. She made her sauce from scratch but I use canned Hunt’s Four Cheese sauce instead but add spices and cook the meat and onion together first. It makes it easier if you work and don’t have a lot of time to cook. The kids like to help prepare the toppings and it’s a fun family activity too.
I have been trying to make great potato salad for years and have been tweaking the recipe until I think I have it close. Not perfect yet but I am still working on it. This is the best I have come up with yet.
Easy Chili recipe. Recently I made this using ground Elk burger instead of beef and sausage. It is perfect for this recipe! Served the old fashioned way- over hot rice.

This is a sweet bread recipe that works for bread, rolls, cinnamon rolls, and just about anything else you want a nice white sweet base for. A recipe I got from my sister.
Comfort food that is really good on a cold blustery winter day.
Great basic noodles recipe used in the above recipe as well.
This stuff is addictive…
These cookies were popular back in the 70’s and are really good- the original recipe doesn’t include chocolate chips but what the heck?

Flourless Cookies!! This next recipe is one I have used for years when I was dieting and didn’t want to eat products containing flour. It is more of a cookie base. You can make them plain as peanut butter cookies or add chocolate chips and drop them on pans, or double the batch as I have here and spoon them into a greased 13 X 9 cake pan and cut them into bars.

To be continued…
